Probiotic yogurt

This is 99% lactose free yogurt and absolutely teeming with probiotics.

Ingredients

1 Litre of Jersey or Guernsey milk (ideally organic and grassfed)

1 small tub of yogurt containg acidiphilous and bifidus

Method

  • Add 1 litre of milk to a saucepan and heat to 45 degrees celcius. Remove from heat
  • In a separate empty glass add 1/3 cup of yogurt
  • Slowly stir in 50-100mls of the warm milk into this glass stir to dilute the yogurt culture
  • Top up the glass with warm milk and continue stirring until all visible signs of the yogurt have been dissolved
  • Pour this mixture immediately into a double insulated thermos which has been preheated with warm water and leave 24hrs
  • After 24hrs pour this mixture into a glass container and store in the fridge
  • The yogurt will be ready to consume once cooled (2-3hrs)
